Making the switch to a vegetarian or vegan diet can be tough, especially if you don’t know how to cook!

Here you will find some simple recipes that can help you make the plunge. Recipes are rated by difficulty on a scale of one to five stars (one being the easiest, five the hardest).  The ingredient list for each recipe has been whittled down to the essentials in order to ensure that every recipe is as simple and affordable as possible (although extra ingredients are listed under suggestions should you feel inspired). Not all recipes are mine, so feel free to leave comments and suggestions  and / or submit your own recipes to Easy Greens!

About the Author: Mirabelle Jones is a guidebook and fiction writer based in Berlin, Germany (the wurst capital of the world).

I’ve been a vegetarian for 11 years now, having made the decision to change my diet due to moral and health reasons while still in High School in California. At the time, I didn’t understand how to cook and quickly became frustrated with vegetarian cookbooks containing mile-long ingredient lists, excessive steps for preparation,  and equipment not found in the common kitchen (who owns a deep fryer, anyway?) After a few years subsisting mainly on grilled cheese sandwiches and frozen food items, I decided I needed a change and once again delved into the world of cook books, this time scalpel in hand. I discovered the joys of carving up gourmet recipes and producing easy to make vegetarian and vegan fare that was not only quick, but tasty. Having moved to Berlin, I’ve found it very difficult to continue my old recipes and decided to launch this site in order to share my new discoveries, as well as some of my old favorites, with those who may be in need of an answer to that ever-present question: “What am I going to eat?”
